Cranberries are Rich in Resveratrol
Cranberries contain resveratrol, a powerful polypherol and antioxidant that promotes health and is anti-
ageing. The flavanoids in cranberry juice protect the heart and reduce the risk of cancer.
Duck with Cranberry Sauce

Oven temperature 450F/
230C/Gas Mark 8
Serves 4
Cranberry Sauce
2 cups cranberries
Grated rind and juice of 2
oranges
One small mango, peeled and sliced

1/3 cup red wine
1 tbsp red wine vinegar
1 stick cinnamon
Pinch ground cloves
60g sugar
Ingredients
2 ½ lbs duck
Oil and Salt
Instructions
Prick the duck skin all
over with a sharp fork. Rub with oil and sprinkle with salt.
Roast the duck on a rack,
breast side down for 15 minutes.
Turn on one side and roast
for 15 minutes.
Turn around and roast for another 15 minutes
Then roast breast side up
for 30 minutes
Drain the fat away several
times during roasting.
Meanwhile, combine the
cranberries, orange rind and juice, red wine, vinegar, cinnamon and cloves in a
deep saucepan.
Bring to the boil and then
cook, covered, for 5 minutes. Add the sugar and cook for a further 5 minutes
Remove the cinnamon stick
and add the mango pieces
Cut the duck into quarters
and serve with the sauce.
